Sausage, Pasta & Peppers Casserole


1 pound rotini pasta
1 pound lean ground beef
1 1/2 pounds sweet Italian sausages or hot if you prefer
2 large onions, chopped
2 cloves garlic, minced
2 sweet red peppers
1 can of tomatoes
28 ounce can of tomato sauce
1 teaspoon dried oregano
1 teaspoon dried basil

Cook pasta until al dente. Drain and rinse under cold water. Meanwhile, brown beef. When it is cooked, leave oil in pan by transferring beef with slotted spoon to a large casserole dish. Cut sausages with scissors or a knife into bite sized pieces and cook in the same skillet until browned. Remove with slotted spoon to casserole. Add onion, garlic, red pepper, and cook for 5 minutes or until soft. Add tomatoes,(break them up) basil, tomato sauce and oregano, to casserole dish with rest of vegetables and sausages. Add pasta. Stir well. Can be prepared and refrigerated for up to 3 days. Bake at 350 degrees for about 40 minutes or until heated through.

Skillet Kielbasa


1 package kielbasa
1 med onion (sliced)
3-4 med potatoes (cut in lg cubes)
1 can beef broth
1 bay leaf
1/2 tsp. thyme
1 can green beans (drained)

Place everything in covered skillet except the green beans, bring to a boil, cover and simmer for 20-25 minutes. Add green beans during the last 5 minutes.
Add salt and pepper to taste.

Crockpot Turkey Kielbasa Stew


3/4 pound low-fat turkey kielbasa, cut into 1 inch pieces
1 pound sauerkraut, rinsed and drained
1 1/2 Granny Smith apples, peeled, cored and cut
crosswise into rings
1/2 onion, thinly sliced and separated into rings
1 1/4 pounds red potatoes, quartered
1 cup chicken stock
1/4 teaspoon caraway seeds
1/4 cup fat-free Swiss cheese, shredded

Place half the sausage in a crock pot and top with sauerkraut. Cover with remaining sausage, apple and onion. Top with potatoes. Add stock and sprinkle with caraway seeds. Cover and cook on HIGH heat 4 hours or until potatoes are tender.

Serve sprinkled with cheese.

Sausage and Cream Corn Bake


Four 1 pound cans cream style corn
1/4 cup onion, chopped
1 pound sausage (pork or turkey) fried, drained, and crumbled
4 eggs
3 cups bread crumbs

Prepare a 2-quart baking dish by spraying with non-stick cooking spray. Combine and mix all. Pour into baking dish and bake for 1 1/4 hours at 375 degrees.
