Kuchen


 

 

 

FILLING:

 

Ingredients:

1 c. cream
2 eggs
1/2 c. sugar
1/2 tsp vanilla

Directions: Mix together (for each Kuchen you’ll need about 3/4 c. of the mixture). 

First, roll the dough then a layer of fruit (peaches, prunes,cottage cheese, cherries, grated raw apples, apricots). Add the cream filling and sprinkle with cinnamon.

 

DOUGH: 


disolve 1 package yeast in 1/4 cup water 

1 cup milk (scalded)
1/4 cup sugar
1 teaspoon salt
1 beaten egg
1/4 cup shortening
4 cups flour

 


Directions: 

Scald milk. Add sugar and salt – cool to warm. Add yeast. Add 2 cups of the flour and beat one minute. Add eggs and beat until smooth. Add shortening and beat one minute. Add rest of the flour until a nice soft dough. Then let rest
10 minutes; and knead on floured surface until smooth ( about 5 minutes). Cover and let rise to double. Knead down again and let rest 10 minutes. Then take about a 7 ounce ball or about the size of a baseball – roll almost as thin as
pie crust. Fit into an 8 inch pie pan. Then arrange fruit of choice on top. The crust should come up the sides of the pan too. Then add about 3/4 cup of
cream mixture. Bake at 350 for 1/2 hour or until filling is set and doesn’t jiggle in the middle.



Cream Gravy




Ingredients: 3 TBSP fat
2 TBS flour
1 cup milk
salt & pepper

Directions: Pour off fat when frying any kind of meat, leaving brown bits and return 3 tablespoons of fat to the pan. Add flour and cook, stirring and scraping brown bits from bottom until flour is lightly browned. Remove from heat and gradually stir in milk, be very careful as flour and grease is very hot.

Return to heat; cook and stir until thickened. If too thick, add more milk or water.

Season with salt and pepper.


Number Of Servings: Makes about 1-1/4 cups

 

Brownies with Caramel Frosting


Ingredients: 2 cups sugar
2 cups flour
1/4 tsp salt
1 cup water
1/4 cup cocoa
1/2 cup oil
1 stick of butter or 1/2 cup
2 eggs
1/2 cup buttermilk
1 tsp soda

Directions: Mix sugar, flour, and salt in a bowl. Set aside. Bring water, cocoa, oil and butter to a boil. Mix with the flour mixture. Add eggs, soda and buttermilk. Pour in jelly roll pan (11×16) and bake 20 minutes at 375º

Caramel Frosting

1 cup brown sugar
3 TBSP butter
1/3 cup cream or carnation milk
1 cup powdered sugar

Boil brown sugar, butter and cream together for 3 minutes. Add powdered sugar.

DOUBLE the frosting for the above brownies.

 

Baking Powder Biscuits


Ingredients: 2 cups flour
1 teaspoon salt
2/3 cup milk
3 teaspoons baking powder
2 – 4 tablespoons shortening

Directions: Sift dry ingredients – cut shortening into dry mixture until it is like coarse
corn meal. Add enough milk while stirring with a fork to make a soft dough that
can easily be handled. Knead lightly 1/2 minute. Roll out to about 1/2 – 1″
thickness. Cut and place on greased cookie sheet. Bake at 450 for 12-15
minutes.
