Chicken Gyros

2 chicken breasts, cut into strips
1/4 cup olive oil
2 tablespoons lemon juice
2 tablespoons garlic, chopped
1/2 teaspoon oregano {dried}
1/2 teaspoon cumin
1/2 teaspoon onion {powder}
1 teaspoon salt

In a bowl or bag, place all of the ingredients together and mix well. Marinate for up to 2 hours.  Once ready, place the chicken on a grill {I use a George Foreman} or in a pan and cook for about 3-4 minutes per side.

Tzatziki Sauce

1 cup cucumber, finely chopped
1/2 cup greek yogurt
1/4 cup sour cream
1 teaspoon mint
1 teaspoon cilantro
1 tablespoon lemon juice
1 garlic clove, minced
1/4 teaspoon salt

Mix all of the ingredients together and let sit for at least 1 hour before using.

Condiments:

pita bread  lettuce tomatoes, sliced red onion, thinly sliced tzatziki sauce {recipe above} Take a piece of pita bread and layer with the lettuce, chicken, tomato, red onion and tzatziki sauce.

Gingered Chicken Thighs


Ingredients
2 tablespoons ground ginger
2 tablespoons orange juice
2 tablespoons honey
2 tablespoons reduced-sodium soy sauce
2 teaspoons curry powder
2 garlic cloves, minced
1/2 teaspoon crushed red pepper flakes
6 boneless skinless chicken thighs (about 1-1/2 pounds)

PEANUT SAUCE:
2 tablespoons chicken broth
2 tablespoons orange juice
1 tablespoon reduced-fat creamy peanut butter
1/2 teaspoon ground ginger

Directions
In a large resealable plastic bag, combine the first seven ingredients; add the chicken. Seal bag and turn to coat; refrigerate for up to 4 hours.
Drain and discard marinade. In a large skillet coated with cooking spray, brown chicken on each side. Transfer to an 11-in. x 7-in. baking dish coated with cooking spray. In a small bowl, whisk sauce ingredients; pour over chicken. Bake, uncovered, at 350° for 20-25 minutes or until no longer pink. Yield: 6 servings.

Southern Chicken & Dumplings


2 1/2 lbs chicken thighs
or boneless breasts
1 can biscuits (cut each
in 1/2 )
2 stalks celery, thinly
sliced
1 medium onion, thinly
sliced
2/3 cup grated carrots
3 tbsp. black pepper
1 tsp. white pepper
1 tsp. seasoned salt (or
to taste)
1 tsp. paprika
1 tsp. onion and garlic
powder
1 tsp. chicken base or 1
bouillon cube
1 bay leaf

Preheat a large Dutch
oven or soup pot, coat
lightly with oil or spray
to keep the chicken
from sticking as you
lightly brown it on both
sides along with the
onion and celery. Cover
with water, add
seasonings, bay leaf
and chicken base.

Cover and let boil on a
medium heat for 8-12
minutes.

Next, add cut-up
biscuits to the pot 2 at a
time so they won’t
clump together. Add
the peas and carrots.

Cook for another 10-12
minutes, stirring pot to
keep dumplings from
settling and sticking to
the bottom.

Serve with a warm pan
of cornbread or a
basket of hot rolls.
Perfect for a fall or
winter supper!

Southern Fried Chicken Tenderloins


1 egg
1/2 cup buttermilk
1 cup flour
1-1/2 tsp garlic powder
1-1/2 tsp pepper
1/2 tsp salt
1/2 tsp paprika
2 # tenderloins
Oil
2 Tbsp parmesan cheese

Whisk the egg and buttermilk together in one bowl and in another bowl combine dry ingredients ( I often use a Ziploc bag for the dry ingredients so I can just toss it for easy clean up when done ).

Dip chicken pieces in egg mixture, then flour mixture.

Heat oil to 375° in a sturdy chicken frying skillet or deep fryer if you have one.  I use peanut oil due to it’s higher flash point.

Fry chicken, a few pieces at a time for 2-3 minutes on each side.  Drain on paper towels and sprinkle with parmesan cheese.

Supremes de Volaille aux Champignons

(Chicken Breasts with Mushroom and Cream)

Ingredients:
4 supremes (boneless, skinless chicken breasts)
1/2 teaspoon lemon juice
1/4 teaspoon salt
Big pinch white pepper
5 tablespoons butter
1 tablespoon minced shallot or green onion
1/4 pound diced or sliced fresh mushrooms
1/8 teaspoon salt
For the sauce:
1/4 cup white or brown stock or canned beef bouillon
1/4 cup port, Madeira or dry white vermouth
1 cup whipping cream
Salt and pepper
2 tablespoons freshly minced parsley
Directions:Preheat oven to 400 degrees.
Rub the chicken breasts with drops of lemon juice and sprinkle lightly with salt and pepper. Heat the butter in a heavy, oven-proof casserole, about 10 inches in diameter until it is foaming. Stir in the minced shallots or green onion and saute a moment without browning. Then stir in the mushrooms and saute lightly for a minute or two without browning. Sprinkle with salt.
Quickly roll the chicken in the butter mixture and lay a piece of buttered wax paper over them, cover casserole and place in hot oven. After 6 minutes, press top of chicken with your finger. If still soft, return to oven for a moment or two. When the meat is springy to the touch it is done. (Please Note: Although Julia suggests to check the chicken after only 6 minutes, I cooked it for closer to 30 minutes. Please use a meat thermometer to ensure the correct temperature before serving!)
Remove the chicken to a warm platter (leave mushrooms in the pot) and cover while making the sauce (2 to 3 minutes).
To make sauce, pour the stock and wine in the casserole with the cooking butter and mushrooms. Boil down quickly over high heat until liquid is syrupy. Stir in the cream and boil down again over high heat until cream has thickened slightly. Off heat, taste for seasoning, and add drops of lemon juice to taste. Pour the sauce over the chicken, sprinkle with parsley and serve immediately.
Serves 4.

Kentucky Fried Chicken Original Recipe (CopyCat)

Chicken
6 pieces chicken-cleaned and trimmed of excess fat
Brine
Water to cover chicken
1 Tablespoon Salt
1 teaspoon MSG (optional, I didn’t use this…. for obvious reasons)

Flour
1 1/2 cup self-rising flour

Egg Wash
2 eggs-beaten
1/3 cup milk

Kentucky Fried Chicken Spice
1 tablespoon thyme
1 tablespoon oregano leaves
1 tablespoon powdered sage
1 teaspoon powdered ginger
1 teaspoon marjoram
1 teaspoon celery salt
1 teaspoon sugar
2 teaspoons pepper
1 teaspoon white pepper
1 tablespoon paprika
2 tablespoons garlic salt
2 tablespoons onion salt
1 teaspoon accent or msg (OPTIONAL)

Add 2-3 Tablespoons mix to every 1 1/2 cup of flour for coating chicken.

OIL
6-8 cups Crisco shortening – This will depend on your deep fryer  (I used PEANUT OIL with great success, it has a higher flash point)

Directions
Place all those 11 herbs and spices ingredients in a grinder or in a blender and pulse for 3-4 minutes to pulverize. Store in an airtight container. Once ground spices will lose their flavor faster than when they are whole. This makes about 3/4 cup.

Flour
Add 2-3 tablespoons of the spice mixture to flour whisking well. Remove 1/2 cup flour/spice mixture and place in bowl or a plastic or paper sack for first coating of chicken. Add the remaining 1 cup flour/spice mixture in 2nd bowl or sack.

Egg Wash
Mix together in medium bowl for dipping chicken pieces.

Let’s get started.
Chicken – Step 1
In a large bowl place cleaned chicken in salted (1 Tablespoon salt + 1 teaspoon MSG, still optional) water to cover chicken. Let soak at least 2 hours in refrigerator.
Step 2
Dry chicken with paper towels. Dredge in 1/2 cup of the flour mixture, shaking off excess. Do all pieces of chicken, one at a time and set on rack until next step. If you have any remaining flour mixture from this 1/2 cup portion add to 2nd sack.
Step 3
Dip into egg/water mixture, allowing excess to drip off.

Step 4
Add any left over flour from the 1/2 cup used for the first coating step into bag with the 1 cup flour/seasoning mixture. Place chicken pieces one at a time, in bag with flour mixture and shake to coat well. Arrange chicken pieces on rack over large cookie sheet and let dry up to 30 minutes.For extra crispy coating, repeat egg wash and flour mixture.
Frying
Add FRESH Crisco to the deep fryer (or pressure fryer). Heat oil 350 degrees, gently add chicken to oil, one piece at a time. Do not add more than 3 pieces to each batch. Fry 12-15 minutes, until chicken is thoroughly cooked. Drain chicken and keep in warm oven while frying remaining chicken. Cooking time may vary especially if using a pressure fryer.

Parmigiano and Herb Chicken Breast Tenders


Ingredients

  • Olive oil, for frying
  • 1 1/2 pounds chicken breast tenders
  • Salt and pepper
  • 1 cup all-purpose flour
  • 2 large eggs, beaten with 1/4 cup water

Breading:

  • 2 cups Italian style bread crumbs
  • 1 cup shredded Parmesan
  • 6 sprigs or stems fresh thyme leaves, stripped and chopped, 2 to 3 tablespoons
  • 6 sprigs fresh rosemary leaves, finely chopped, 3 tablespoons
  • 2 handfuls chopped flat-leaf parsley leaves
  • 4 cloves garlic, finely chopped
  • 1 teaspoon crushed red pepper flakes
  • Chicken Parmigiano, recipe follows

Directions

Preheat oven to 350 degrees F. Place a nonstick cookie sheet in oven with a tin foil liner.

Heat 1/2-inch oil in a large nonstick skillet or frying pan over medium to medium high heat.

Season chicken tenders with salt and pepper. Wash hands. Place flour in a shallow dish. Beat eggs with water in a second dish along side the flour. In a third dish, combine the breading ingredients. Coat chicken in flour, then egg, then bread and cheese mixture. To keep your hands clean, ask for plastic gloves at the butcher counter. To ease your clean up, try using disposable tin pie tins for the flour, egg and bread crumbs.

Cook chicken until deeply golden on each side, 3 to 4 minutes. Transfer to cookie sheet in preheated oven and finish off for another 5 minutes cooking time. Cook chicken 5 or 6 tenders at a time in a single layer, adding additional oil if necessary. If the chicken begins to brown too quickly lower heat slightly. Serve chicken hot or cold with green salad or, complete as a Parmigiano.

Simple Tomato Sauce for Chicken Parmigiano:

  • 2 tablespoons extra virgin olive oil
  • 1 small white onion, finely chopped
  • 3 cloves garlic, minced
  • 1 (14 ounce) can chunky style crushed tomatoes
  • 1 (28 ounce) can crushed tomatoes
  • 1 cup chicken broth or stock
  • A handful fresh basil leaves, torn into small pieces
  • Coarse salt
  • 1 1/2 cups shredded provolone
  • 1/2 cup grated Parmigiano-Reggiano
  • 1 pound spaghetti, cooked to al dente

Set water on to boil for pasta and prepare according to package directions for al dente. Before coating chicken, add oil, onions and garlic to a saucepan to cook medium low heat. Stir occasionally for 10 minutes while you are working on the chicken. Add both cans of tomatoes and a cup of chicken brothand bring sauce to a bubble. Reduce heat to a simmer until ready to serve. Stir in torn basil and season sauce with salt, to your taste.

Place a little of the sauce on the chicken tenders, top with the shredded provolone and Parmigiano. Place in oven or broiler to melt the cheese and then serve. Coat the hot, cooked pasta lightly with sauce then serve.

Orange Marmalade Soy Wings


Ingredients
15 whole chicken wings
(about 3 pounds)
1 cup soy sauce
1 cup orange marmalade
3 garlic cloves, minced
1 teaspoon ground ginger
1/4 teaspoon pepper
Directions
Cut chicken wings into three
sections; discard wing tip
sections. In a small bowl,
combine the soy sauce,
marmalade, garlic, ginger
and pepper. Cover and
refrigerate 1/2 cup marinade
for basting.
Place remaining marinade in
a large resealable plastic
bag. Add wing sections; seal
bag and toss to coat evenly.
Refrigerate for 8 hours or
overnight.
Drain and discard marinade.
Place chicken wings in a
greased 15-in. x 10-in. x 1-
in. baking pan. Bake,
uncovered, at 350° for 15
minutes.
Baste with a third of the
reserved marinade; bake 15
minutes longer. Baste with
remaining marinade. Bake
10-20 minutes more or until
chicken juices run clear.

THE BEST Homemade Chicken Pot Pie


INGREDIENTS

Chicken and stock ingredients:

  • 1 (3 1/2 pound) frying chicken
  • 1 carrot
  • 1 celery stalk
  • 1 small onion, halved
  • 2 teaspoons salt

Pie crust ingredients:

  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) chilled unsalted butter, diced into 1/2-inch cubes (best to chill cubes in the freezer for at least 15 minutes before using)
  • 1/4 cup vegetable shortening, chilled
  • 3 to 4 Tbsp ice water

Filling ingredients:

  • 6 Tbsp unsalted butter
  • 1 large onion, diced (about 1 1/4 cups)
  • 3 carrots, thinly sliced on the diagonal
  • 3 celery stalks, thinly sliced on the diagonal
  • 1/2 cup all-purpose flour
  • 1 1/2 cups milk
  • 1 teaspoon chopped fresh thyme leaves
  • 1/4 cup dry sherry
  • 3/4 cup green peas, frozen or fresh
  • 2 Tbsp minced fresh parsley
  • 2 teaspoons salt
  • 1/2 teaspoon freshly ground black pepper

Egg wash:

  • 1 egg whisked with 1 Tbsp water

Special equipment needed:

  • 6 10-ounce ramekins
1 Cook the chicken and make the chicken stock. Combine the chicken, carrot, celery, onion and salt into a large stock pot. Add cold water until just covered and bring to a boil over high heat. Reduce the heat to a simmer and cook for 45 minutes. Remove the chicken from the pot and let cool for 15 minutes. While the chicken is cooling, continue to boil the remaining water and vegetables in the pot. When the chicken has cooled enough to touch, strip away as much of the meat as you can. Place the meat on a dish, set aside. Return the chicken bones to the stockpot and continue to boil, on high heat, until the stock has reduced to a quart or quart and a half. Set aside 2 1/2 cups of the stock for this recipe. The remaining stock you can refrigerate and store for another purpose.
2 Prepare the pie crust dough. Combine the flour and salt in a food processor. Add the chilled butter cubes and pulse 5 times to combine. And the shortening and pulse a few more times, until the dough resembles a coarse cornmeal, with some pea-sized pieces of butter. Slowly stream in ice water, a tablespoon at a time, pulsing after each addition, until the dough sticks together when you press some between your fingers. Empty the food processor, placing the dough on a clean surface. Use your hands to mold into a ball, then flatten the ball into a disk. Sprinkle with a little flour, wrap with plastic wrap, and refrigerate for at least 30 minutes, or up to 2 days, before rolling.
3 Prepare the filling. Preheat oven to 400°F. In a large skillet, melt butter on medium heat. Add the onions, carrots, and celery, and cook until the onions are translucent, about 10 minutes. Add the flour and cook, stirring, one minute more. Whisk in 2 1/2 cups of the chicken stock. Whisk in the milk. Decrease the heat to low and simmer for 10 minutes, stirring often. Add the chicken meat, thyme, sherry, peas, parsley, salt and pepper and stir well. Taste and adjust seasoning if necessary. Divide the warm filling among six 10-ounce ramekins.
4 Prepare the crust. Roll out dough on a lightly flour surface to a little less than a quarter-inch thick. Cut into 6 rounds, slightly larger than the circumference of the ramekins. Lay a dough round on each pot pie filling. Fold the excess dough under itself and use the tines of a fork to press the dough against the edge of the ramekins. Cut a 1-inch vent into each individual pie. Use a pastry brush to apply an egg wash to each pie. Line a baking sheet with foil, place the pies on the baking sheet. Bake at 400°F for 25 minutes, or until the pastry is golden and the filling is bubbling. Let cool for at least 5 minutes before serving.

Chicken Spinach Alfredo Lasagna


This recipe is like having all my favorite things, all in one dish!

  • 8 ounces, weight Lasagna Noodles
  • 3 cups Heavy Cream
  • 2 cans (10.75 Oz. Can) Condensed Cream Of Mushroom Soup
  • 1 cup Parmesan Cheese, Grated
  • ¼ cups Butter
  • 1 Tablespoon Olive Oil
  • ½ whole Oil, Diced
  • 4 cloves Garlic, Sliced
  • 5 whole Mushrooms, Diced
  • 1-½ pound Cooked Chicken Shredded
  • Salt And Pepper
  • 1 cup Ricotta Cheese
  • 1 bunch Fresh Spinach, Rinsed
  • 3 cups Shredded Mozzarella Cheese

Preheat oven to 350ºF. Bring a large pot of lightly salted water to a roiling boil. Cook lasagna noodles according to package instructions, about 8 to 10 minutes, or until al dente. Drain, and rinse with cold water to stop the cooking.

In a saucepan over low heat, mix together heavy cream, cream of mushroom soup, Parmesan cheese, and butter. Simmer, stirring frequently, until well blended.

Heat the olive oil in a skillet over medium heat. Cook and stir the onion in the oil until tender, then add garlic and mushrooms. Mix in the chicken, and cook until chicken is warmed. Season with salt and pepper.

Lightly coat the bottom of a 9×13 inch baking dish with enough of the cream sauce to coat. Layer with 1/3 of the cooked lasagna noodles, 1/2 cup ricotta, half of the spinach, half of the chicken mixture, and 1 cup mozzarella. Top with 1/3 of the cream sauce, and repeat the layers. Place the remaining noodles on top, and spread with remaining sauce.

Bake 1 hour in the preheated oven, or until brown and bubbly. Top with the remaining mozzarella, and continue to bake until the cheese is melted and lightly browned.
